Joyce Goldstein is a nationally known chef, author, teacher, and Mediterranean cooking expert. Her books include Mediterranean The Beautiful, Italian Slow and Savory, Solo Suppers, Antipasti, Enoteca and Cucina Ebraica.
Her latest book, Mediterranean Fresh features salads and small plates from all areas of the Mediterranean region. There is no end to the variety of salads one can create based on the central ingredients of vegetables, leafy greens, grains, bread and fruits. Also by varying a dressing or a simple garnish, these salads can be transformed into a different dish to suit every mood and palate.
Students will have the opportunity to experiment with the following salads and alternative dressings in this dynamic and fun workshop.

First things first: 'antipasto' is the singular and antipasti is the plural for these appetizers normally served before the pasta and the main course in Italian restaurants. These first courses are not limited to the old fashioned notion of thin-sliced cold cut platters with a few raw vegetables and some olives on the side.
Joyce Goldstein makes that abundantly clear in her book, Antipasti which features a wide selection of recipes from most of the regions of Italy. Students will come away from this class with a whole new repertoire of flavorful recipes.
